After the fish has been salted in the brine of rock salt & brown sugar, it must be rinsed for 24 hours under running water.  Then it is ready for slicing.

Slice the fish across the grain into thin strips.  Use a very sharp knife, then aim to stop cutting just at the edge of the skin.

Cut up as many medium white onions as you have fillets of fish.  This was 5 slabs of fish, so 5 onions.

In a large measuring cup with spout, mix 2 parts cider vinegar to 1 part water, plus some sweet pickle juice if you have it. Carefully pour into the jar so as not to disturb the pretty layers.

Let the flavors mix in the fridge for 24 hours and serve! This pickled salmon can keep in the fridge up to 6 months, but must be refrigerated since this is not a preservative canning method...but it sure is yummy! My brother, cousins & I would eat cereal bowls full of this stuff when we'd arrive at my dad's mom's house for Christmas! :-9
