My mom has tried a food processor, but that makes more of a paste that doesn't seem like meatballs, so we prefer an old-fashioned meat grinder...

Since my mom's hands cannot handle the grease, my job is to roll the meatballs in flour so she can fry them.

Use a spoon to form a basic meatball shape, then let rolling it in the flour form it into a ball.  Do not roll too much or the meatballs won't be as tender.

My mom fries the meatballs in a small amount of oil in a cast iron pan just enough to be brown outside and barely underdone in the middle, so they won't be overdone when reheated for serving.

By frying the outside, the oil from frying creates a moisture barrier, so even when reheated in the oven, the inside stays moist and tender while being cooked all the way through.  We freeze the meatballs on cookie sheets, then they can be stored in bags for whichever party or dinner is next! Yum! :-9
