Krumkake
Lots of eggs beaten with sugar, then heavy cream & cardamom make the krumkake batter. Set the krumkake iron on medium to medium-low heat on the stove. Just before using, coat with non-stick cooking spray, then add a teaspoon of batter just off-center.

Any more batter than this and you'll just waste it as it oozes out the sides!

Carefully close the krumkake iron and check after 30 seconds. Depending on your stove and your iron, it might take longer for each side to cook to golden brown.

With luck you'll have a golden brown krumkake, but as long as one side is pretty and the other is not burnt or doughy, it will still be tasty!

Immediately remove the krumkake from the iron with a fork, set on paper towels, and roll into shape. Work quickly since it will cool too fast!

One batch should make 5 dozen krumkake, but will depend on your iron. Some irons cannot make krumkake as wafer-thin as they should, so the batch won't make as many finished krumkake.

Since I made a double-batch of batter, I made 10 dozen krumkake! Don't bother trying on a humid day, since they won't have a chance to set and will just get soggy before you can get them into airtight tins for storage.

10 dozen krumkake took a LONG time over the stove, but I stayed warm on a chilly night! Be sure to store in airtight tins, since moisture in the air will turn your krumkake soggy within the hour otherwise. Even Kylie the Kitty loves krumkake! :-9
